Is there any "easy" way to remove logging of IP Addresses in Audit Logs?

Yes, implement and replace IClientInfoProvider.

I cant find any place IClientInfoProvider is used in backend application... Where should I to this?

It's used in ABP's DefaultAuditInfoProvider.
